Chef Ryan Cole at Salsify is pushing boundaries in terms of delicate yet intense seasonal flavours and techniques. With inspiration from the restaurant name Salsify (a root vegetable with a unique flavour) Ryan and his team have created a series of perfectly restrained and utterly compelling dishes. They have revamped the Roundhouse, a beautiful heritage building overlooking Camps bay. With leather-clad wall and faded vintage rugs on original oak floors add romance, while graffiti by street artist Skull Boy and a bronze sculpture by Otto du Plessis adds great ambiance.
